周末锻炼兼展示厨艺,准备做清蒸鲈鱼、可乐鸡翅、凉拌菠菜、海蛎豆腐汤。结果买不到海蛎,只好改成花蛤汤,
清蒸鲈鱼:只需要在菜市场让卖鱼的把鱼杀好,回家之后切几道花口,把鱼的内外都抹上盐,在鱼肚里填上姜丝,大料等等,在盘里倒上酱油,香油,放到微波炉开高火转4分钟(我开了6分钟,结果太过了),拿出来再撒上一些葱末,香菜叶就OK了。
凉拌菠菜:这个就更简单了,在盘里先调好盐巴味精香油酱油蒜茸,把菠菜在开的水里烫一下,捞出来在盘子里拌拌就行了。
可乐鸡翅:把鸡翅用姜丝、酱油在碗里搅拌一下腌上半个小时,用可乐当汤烧热,把腌好的鸡翅倒进去煮,可乐煮干,加上味道就行了。
花蛤汤:这个汤在深圳还真不是很常见,要是在福州的话,几乎每个饭店饭馆食堂都有的。。花蛤买回来一定要泡上半天,让花蛤把泥土都吐出来,不然煮出来的汤泥巴会很多…把水烧开了之后,花蛤扔下去,受热了花蛤们会纷纷张开贝壳。等煮熟了再放上姜丝一起煮煮,放上味道,关了火再撒上香菜、小葱就行了,记得姜一定要多放,不然很难去腥味。

清蒸鲈鱼用微波炉高火只能蒸4分钟,我用了6分钟,全蒸花了,教训啊~
